- Carbon Steel Woks: These are the most traditional type of wok and are favored for their rapid heat response and high heat tolerance. They require seasoning but, once seasoned, they have a natural non-stick surface.
- Cast Iron Woks: These woks retain heat very well, providing an even cooking surface. Traditional Chinese cast iron woks are thinner and lighter than Western-style cast iron woks, which can be quite heavy. Like carbon steel woks, they require seasoning.
